In IRIX 3.2, psview reads from stdin if no file is specified. I
frequently use the command line
psroff -me xyz.me | psview -F
to preview documents. (-F gives me a page sized window so I don't have
to stretch it out).
say does work on standard input. You have to have a null string at the
end as indicated in the man page.

psview is your best bet.
