Changing default editor in xmh. How do I do it ?

How can I change the default editor that xmh uses when I compose, reply or
forward ?
I've tried changing the "Editor:" value in my .mh_profile, but xmh seems to
ignore this.
I'd like to use an editor that (a) I'm familiar with and (b) will allow me to
include other files, pack paragraphs etc. [Will the default editor do this ??].
Also : how/when does xmh get rid of deleted files (which it seems to keep in my
folders as "#nn" files ? Is it system dependent or do I need to do it myself
explicitly ??
