While I am inclined to agree with Al that using a phone for this project
probably isn't a good choice,
- I feel you should aim for 600 dpi. For a US letter sized page, that's
about 33 megapixels.
- For iPhone 14 Pro and later, the standard camera app will let you
enable ProRaw, which gets you 48 megapixels, and disables most of the
assorted "computational photography" features (running adjacent pixels
at different ISO levels for "HDR included" photos, taking a continuous
stream of images and selecting one near button-press time that's
"best", maybe inclusion of the distance data from the LIDAR sensor,
etc). It also disables the part where the output pixel is a result of
multiple input sensor pixels, a behavior which helps defeat the issues
of the rgb layout and Bayer filters and such, producing better color.
None of the things disabled seem likely to be a problem for document
scanning. ;)
