If you have an iOS device, the Halide camera app has the ability to capture RAW photos without any AI processing, though the resolution in that mode is limited to 12 megapixels.

Be EXTREMELY careful attempting to correctly archive documents with smartphones, especially at high resolutions.
They have been known to apply AI slop to the images. I had a friend that took a high resolution picture of a
pc board and the markings on the chips were made illegible.
